"Quiche This recipe was given to Cherry by someone in Sweden years ago. It's great for any meal. Cherry says they love to eat the leftovers for breakfast! Crust: 1 cup organic whole wheat flour 1 stick organic butter, softened 2 or 3 heaping tablespoons cottage cheese Spray a deep dish pie pan. Mix the ingredients together, incorporating the butter and cottage cheese evenly. It will be crumbly, but moist enough to press into the pan. Filling: 2 Reedy Fork Farm large organic eggs 3/4 cups organic heavy whipping cream 1 cup organic sharp grated cheese 4 - 5 slices nitrate free ham (or whatever you want to put in - mushrooms, veggies, etc.) Dash of salt and pepper Preheat the oven to 350. Mix the eggs into the whipping cream, then add cheese and other fillings, salt and pepper. Stir all together, and pour into the unbaked crust. Bake for 20 - 25 minutes.- Let sit for 10 minutes before serving. Sugar Cookies This recipe is adapted from one from Cherry's mom Rachel Williamson. They were part of a Valentine's care package sent to Hayley, who is away at college! 1/2 cup organic butter, softened 1 cup of sugar 1 egg from Reedy Fork Farm 1 1/2 teaspoon vanilla (not imitation) 2 cups organic wheat pastry flour 3/4 teaspoon aluminum free baking powder 1/4 teaspoon salt Use a mixer and cream the butter and sugar until light and fluffy. Beat in the egg and vanilla. Sift together the dry ingredients. Gradually add the dry ingredients to the creamed mixture. Wrap the dough in plastic wrap and chill for at least one hour. Preheat oven to 400 degrees. On a lightly floured surface, use a floured rolling pin to roll out dough to a 1/8 inch thickness. Use cookie cutters to cut out the dough. Place the cookies on a lightly greased baking sheet and bake 8 - 10 minutes until the cookies are lightly browned. Remove from the cookie sheet and cool. Icing 2 1/2 cups confectionery sugar 1/3 cup Organic Valley milk 1/2 teaspoon vanilla (not imitation) Food coloring Sprinkles Combine the ingredients with a mixer. Ice the cookies with a butter knife. Add sprinkles and let icing set for about 15 minutes. Makes 3 dozen. "
